- 2 sweet potatoes, peeled and cubed 🍠
- 1 apple, cored, peeled, and chopped 🍏
- 1 onion, chopped 🧅
- 2 carrots, grated 🥕
- 1 cup red lentils, rinsed 🍲
- ½ teaspoon ground cumin 🌿
- Water, as needed 💧
- Salt and pepper, to taste
Instructions
- Sauté the onion: In a large pot, heat a little olive oil over medium heat. Add the chopped onion and cook until soft and translucent.
- Add the vegetables and lentils: Stir in the grated carrots, cubed sweet potatoes, and chopped apple. Add the rinsed red lentils and mix well.
- Simmer: Pour in enough water to cover the ingredients. Bring to a boil, then reduce heat and let it simmer for 15-20 minutes, or until the vegetables and lentils are soft.
- Season and blend: Stir in the ground cumin, salt, and pepper. Let it simmer for another 5 minutes before blending the soup until smooth and creamy.
- Serve and enjoy: Pour into bowls and serve hot. Optionally, drizzle with a little olive oil or sprinkle fresh herbs on top

- For a chunkier texture, mash some of the ingredients instead of fully blending.
- For extra protein, add cooked chickpeas or quinoa.
